Introduction

  2. Add chicken breast to the pot and season with salt and pepper. Cook until browned on all sides.
  3. Add the chicken broth and sliced carrots to the pot. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes.
  4. In another pot, cook the rice noodles according to package instructions. Once done, drain and set aside.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Add the cooked noodles to the pot. Stir in the soy sauce and chopped green onions.
