- 300g Chicken breast, boneless and skinless

- 200g Rice noodles

Instructions
- In a large pot heat olive oil over medium heat. Add garlic, ginger and turmeric and sauté for 2 minutes until fragrant.
- Add chicken breast to the pot and season with salt and pepper. Cook until browned on all sides.
- Add the chicken broth and sliced carrots to the pot. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes.
- In another pot, cook the rice noodles according to package instructions. Once done, drain and set aside.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
