A Classic Feast: Traditional Lamb Stew

Ingredients:
- 500g of lamb diced into cubes
- 2 large onions, finely chopped
- 3 cloves of garlic, minced
- 500g of potatoes diced into chunks
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 tbsp olive oil
- 1 litre of beef stock
- 1 bay leaf
- 1 sprig of rosemary
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large, deep pot. Add the lamb cubes and sear until browned on all sides. Remove and set aside.
- In the same pot, add the finely chopped onions and minced garlic. Sauté until the onions are soft and translucent.

- Bring the stew to a boil, then reduce the heat to low and let it simmer for around 2 hours, or until the meat is tender and the stew is thickened.
- Once it’s cooked to your preferred consistency, remove the bay leaf and rosemary. Give it a good stir and do a final taste check. Serve it hot with a chunk of bread on the side.
