Teriyaki-Glazed Cod with Cauliflower Rice

Ingredients

  • 4 cod fillets
  • 1 head of cauliflower
  • 1 bottle of teriyaki sauce (store-bought or homemade)
  • 1 tablespoon of olive oil
  • Sesame seeds (for garnish)
  • Scallions or green onions (for garnish)

For the Homemade Teriyaki Sauce

  • 1/2 cup of soy sauce
  • 1/4 cup of water
  • 2 tablespoons of sweet rice wine
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of minced garlic
  • 1/4 teaspoon of minced ginger
  • 2 tablespoons of cornstarch
  • 1/4 cup of cold water

Instructions

  1. Prepare the teriyaki sauce: If you are making homemade teriyaki sauce, combine all the ingredients in a saucepan. Heat over medium heat until the sugar is dissolved, then combine the cornstarch and cold water separately. Slowly add the cornstarch mixture to your saucepan, constantly stirring until your sauce has thickened. Set aside to cool.
  2. Prepare the cauliflower rice: Remove the leaves and stem of the cauliflower and cut into chunks. Place the chunks into a food processor and pulse until the pieces are the size of rice. Add olive oil to a pan over medium heat. Add the cauliflower rice and cook for 7-10 minutes or until soft. Set aside and keep warm.
  3. Prepare the cod: Pat the cod fillets dry and coat each one with your teriyaki sauce. Place the fillets on a preheated grill or grill pan on medium-high heat. Cook for about 3-4 minutes on each side, until the fish is opaque and flakes easily. Toward the end of the cooking time, add additional teriyaki sauce on each fillet.
  4. When the cod and cauliflower are ready: Serve the teriyaki-glazed cod over a bed of cauliflower rice. Garnish with additional teriyaki sauce, sesame seeds, and scallions. Enjoy this mouth-watering and healthy dish!
