Ingredients

  • 2.2 lb Beef cut into chunks
  • 1 lb Potatoes
  • 1 lb Carotts
  • 5 Red onions, finely chopped
  • 5 Cloves of garlic, finely chopped
  • 0.6 cup Red wine
  • 2.2 cup Beef stock
  • 2 Bay leaves
  • 1 tbsp Tomato puree
  • 1 tbsp Red wine vinegar
  • 2 tbsp Olive oil
  • Salt and pepper to taste

Instructions

  1. In a thick-bottomed pan, heat olive oil over medium heat.
  2. Add the onions and garlic, saute until they start to caramelize.
  3. Next, add the beef chunks and brown them on all sides.
  4. Add the tomato puree, red wine, beef stock, bay leaves, and vinegar to the pot. Bring to a boil.
  5. Add Potatoes and Carrots
  6. Reduce the heat to low and simmer for at least 2 hours, or until the beef is tender and the sauce has thickened.
  7. Season with salt and pepper. Your delicious Stifado is ready to be served warm.
