Step-by-step Pumpkin Soup Recipe
- Preheat your oven to 200°C (180°C for fan ovens).
- Cut the pumpkin into quarters. Remove the seeds and skin, then cut into chunks.
- Place the pumpkin chunks in a roasting pan, drizzle with olive oil, and season with salt, pepper, and nutmeg. Roast for about 30 minutes until soft and caramelized.
- While the pumpkin is roasting, heat some olive oil in a large pot. Add the chopped onion and garlic, and sauté until translucent.
- Remove the roasted pumpkin from the oven and add to the pot with the onions and garlic. Stir well.
- Add the vegetable stock to the pot and bring the mixture to a boil. Lower the heat to a simmer, cover, and let it cook for about 15-20 minutes.
- Let the soup cool slightly, then use a hand blender or food processor to blend until smooth.
- Taste and adjust seasoning as needed. Your perfect pumpkin soup is ready to be served! Garnish with fresh herbs of your choice.
