Ingredients

  • 500g boneless chicken breasts, cubed
  • 2 medium onions, diced
  • 4 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 parsnip, chopped
  • 500g potatoes, chopped
  • 1.5 litres of chicken stock
  • 2 spring of rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons of olive oil

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, and sauté until they begin to soften.
  2. Add the chicken pieces to the pot and cook until they are no longer pink in the middle.
  3. Add the carrots, celery, parsnip, and season with the salt and pepper. Sauté for a further 10 minutes until the vegetables begin to soften.
  4. Add the potatoes, rosemary, and the chicken stock to the pot. Bring to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for around 45 minutes until all the vegetables are tender.
  6. Check the seasoning and adjust if necessary. Your One Pot Chicken and Vegetable Soup is now ready to serve.
