Ingredients

  • 150 grams of high-quality dark chocolate
  • 125 grams of unsalted butter
  • 125 grams of caster sugar
  • 40 grams of self-raising flour
  • 3 whole eggs
  • 1 egg yolk

Procedure

  1. Start with preheating the oven to 2000C.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water until smooth.
  3. In a separate bowl, beat the eggs, egg yolk, and sugar together until pale and fluffy.
  4. Gently fold in the melted chocolate mixture, then sift in the flour and mix until combined.
  5. Lightly butter four ramekins and divide the cake batter equally among them.
  6. Place the ramekins on a baking tray and bake for 12 minutes, or until the sides are firm but the centres are soft.
  7. Let the cakes cool for a minute, then invert onto plates. Serve immediately.

Tips

  • If you want them to be more molten, bake them for 10 minutes instead of 12.
  • Feel free to serve it with ice cream or a dusting of powdered sugar for an extra touch of sweetness.
