Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream together the butter and eggs until light and fluffy. Then, stir in the key lime juice and zest.
  4. Slowly mix the dry ingredients into the wet ingredients, alternating with buttermilk until just combined.
  5. Pour the batter evenly into the cupcake liners. Bake for about 20-22 minutes, until a toothpick inserted into the center comes out clean.
  6. While the cupcakes cool, make the frosting. Melt the white chocolate chips in the microwave, and beat together with butter until creamy. Gradually add the icing sugar and beat until fluffy.
