- 1 cup freshly grated Parmesan cheese
- 2 tablespoons butter

Instructions
- Heat olive oil over medium heat in a large pan. Add shrimp, season with pepper, and cook until pink. Remove and set aside.
- Add butter to the same pan. When butter is melted, add onion and sauté until it becomes transparent. Add bell pepper and carrot (optional) and sauté for few minutes. Add garlic and sauté till it is fragrant.
- Add Arborio rice to the pan, stirring to coat with butter. Cook until the rice becomes translucent.
- Increase the heat and pour in the wine. Stir continuously until the wine has been absorbed by the rice.
- Now, start adding the warm broth, one cup at a time. Wait until each addition is almost completely absorbed before adding the next, stirring continuously.
- Once the rice is creamy yet still al dente, add the cooked shrimps back into the pan. Stir in the parmesan and season with pepper to taste.
