A Delightfully Warm and Cozy Carrot Cake Recipe

- For the cream cheese frosting: 1/2 cup of butter, 8 ounces of cream cheese, 1 teaspoon of vanilla extract, and 3 to 4 cups of powdered sugar
Instructions
- Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius), and grease and flour a 9×13 inch baking pan.
- In a large bowl, mix together the grated carrots, sugar, oil, and eggs until well blended.
- In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add this dry mixture to the carrot mixture and stir just until blended.
- Pour into the prepared baking pan, and bake in the preheated oven for 40 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
- While the cake is cooling, prepare the frosting: In a medium bowl, blend together the butter, cream cheese, and vanilla. Gradually add powdered sugar while beating continuously until the frosting is creamy. Frost the cooled cake. Garnish with chopped nuts if you’d like.
