Greek Lamb Souvlaki Skewers: The Authentic Greek Delight
Souvlaki is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer. Ingredients
- 1.1 lb lamb shoulder, cut into 3cm cubes
- 3 cloves garlic, crushed
- 1 lemon, juiced and zested
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- salt and pepper to taste
- 8 skewers, soaked in water for 30 minutes
Instructions
- Place the lamb in a bowl. Add garlic, lemon juice and zest, olive oil, oregano, cumin, coriander, salt, and pepper. Mix well and marinate for at least 2 hours, or preferably overnight in the fridge.
- Preheat grill to medium-high heat. Thread 4-5 pieces of lamb onto each skewer.
- Cook the skewers on the preheated grill, turning frequently, for 10-12 minutes, or until the lamb reaches desired doneness. You can also use a griddle pan if you don’t have a grill.
- Let rest for 5 minutes before serving. Serve with pita bread, tzatziki sauce, and a Greek salad if desired.
