Today, we will be taking a deep dive into one of Italy’s traditional dishes, Spaghetti Aglio e Olio. This simple yet flavourful dish is favoured for its easy preparation and the mouth-watering combination of garlic, olive oil, and spaghetti. The dish’s name, translated, means “Spaghetti with garlic and oil” in English.
Ingredients
- 200g of Spaghetti
- 4 cloves of Garlic
- 1/2 teaspoon of Red Pepper Flakes.
- 1/2 cup of Extra Virgin Olive Oil
- Freshly ground Black Pepper
- 1/2 cup of fresh Parsley (chopped)
- A pinch of Salt
Preparation
- Begin by boiling the spaghetti in a large pot of generously salted water until it is al dente.
- While the spaghetti is cooking, thinly slice the garlic and heat it with the extra virgin olive oil in a large pan over low heat.
- Add the red pepper flakes and a pinch of salt to the oil and garlic. Let it simmer lightly for a couple of minutes, or until the garlic turns golden brown in colour.
- Once the spaghetti is done, drain it while reserving a cup of the pasta water.
- Add the drained spaghetti to the pan with oil and garlic. Mix well, ensuring every strand of spaghetti is well coated. If needed, add the reserved pasta water.
- Toss in the chopped parsley and give everything a good mix.
- Sprinkle some freshly ground black pepper on top before serving.
