The Comforting Warmth of Chicken Ramen

Ingredients
- 1 whole chicken (approximately 2kg)
- 2 large onions, halved
- 4 cloves of garlic, peeled
- 2 inch piece of fresh ginger, sliced
- 1 bunch of green onions, sliced (reserve some for garnishing)
- 2 whole dry shiitake mushrooms
- 10 cups of water
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 2 teaspoons of sea salt
- 4 servings of fresh ramen noodles
- Toppings: Soft-boiled egg, nori (seaweed), bamboo shoots, and sliced green onions
Instructions
- In a large pot, add the whole chicken, onions, garlic, ginger, green onions, and mushrooms. Pour in the water ensuring that the chicken is fully submerged.
- Bring the pot to a boil over high heat, then reduce to a simmer. Let it simmer for around 3 hours.
- Every 30 minutes, skim off any impurities that float to the top. The aim is to achieve a clear broth.
- After 3 hours, remove the chicken and set it aside. Strain the broth and put it back into the pot.
- Add the soy sauce, mirin, sake and salt to the broth and bring it back to a simmer.
- While the broth simmers, shred the chicken into thin pieces.
- In a separate pot, boil the ramen noodles according to the package instructions.
- To assemble the ramen bowl, first add a serving of ramen noodles, then pour the hot chicken broth over them. Add the shredded chicken, and your choice of toppings.
