The Comforting Warmth of Chicken Ramen

Ingredients

  1. 1 whole chicken (approximately 2kg)
  2. 2 large onions, halved
  3. 4 cloves of garlic, peeled
  4. 2 inch piece of fresh ginger, sliced
  5. 1 bunch of green onions, sliced (reserve some for garnishing)
  6. 2 whole dry shiitake mushrooms
  7. 10 cups of water
  8. 2 tbsp soy sauce
  9. 2 tbsp mirin
  10. 2 tbsp sake
  11. 2 teaspoons of sea salt
  12. 4 servings of fresh ramen noodles
  13. Toppings: Soft-boiled egg, nori (seaweed), bamboo shoots, and sliced green onions

Instructions

  1. In a large pot, add the whole chicken, onions, garlic, ginger, green onions, and mushrooms. Pour in the water ensuring that the chicken is fully submerged.
  2. Bring the pot to a boil over high heat, then reduce to a simmer. Let it simmer for around 3 hours.
  3. Every 30 minutes, skim off any impurities that float to the top. The aim is to achieve a clear broth.
  4. After 3 hours, remove the chicken and set it aside. Strain the broth and put it back into the pot.
  5. Add the soy sauce, mirin, sake and salt to the broth and bring it back to a simmer.
  6. While the broth simmers, shred the chicken into thin pieces.
  7. In a separate pot, boil the ramen noodles according to the package instructions.
  8. To assemble the ramen bowl, first add a serving of ramen noodles, then pour the hot chicken broth over them. Add the shredded chicken, and your choice of toppings.
