Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons of olive oil
  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 1 cup of shredded Wisconsin cheddar cheese
  • 4 cups of low-sodium chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cauliflower florets in olive oil, season with salt and pepper, and spread them out on a baking tray. Roast for about 20-25 minutes or until they’re golden and crispy.
  2. While the cauliflower is roasting, heat a large pot over medium heat. Add the diced onion and minced garlic, cooking until the onion becomes translucent.
  3. Once the cauliflower is done, add it to the pot along with the chicken broth. Bring it to a boil, then reduce to a simmer for about 15 minutes.
  4. Use an immersion blender (or in batches in a countertop blender) to blend the soup until it’s smooth.
  5. Stir in the heavy cream and the shredded Wisconsin cheddar cheese. Keep stirring until the cheese has melted and the soup is well combined.
  6. Season with additional salt and pepper to taste. Serve hot, garnished with chopped chives.
