Ingredients
- 500g boneless chicken breasts, cubed
- 2 medium onions, diced
- 4 cloves of garlic, minced
- 1 bell pepper, chopped

- 2 celery stalks, chopped
- 1 parsnip, chopped
- 500g potatoes, chopped
- 1.5 litres of chicken stock
- 2 spring of rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons of olive oil
Steps
- In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, and sauté until they begin to soften.
- Add the chicken pieces to the pot and cook until they are no longer pink in the middle.
- Add the carrots, celery, parsnip, and season with the salt and pepper. Sauté for a further 10 minutes until the vegetables begin to soften.
- Add the potatoes, rosemary, and the chicken stock to the pot. Bring to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for around 45 minutes until all the vegetables are tender.
- Check the seasoning and adjust if necessary. Your One Pot Chicken and Vegetable Soup is now ready to serve.
