Lemonade Frosting

  • 2 cups of butter, softened
  • 8 cups of powdered sugar
  • 1/2 cup of frozen lemonade concentrate
  • Zest of 1 lemon

Procedure

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, mixing well after each. Combine the flour, baking powder, baking soda, and salt. Add these dry ingredients to the creamed mixture, alternating with the buttermilk, lemon juice, and lemon zest. Finally, stir in the strawberries and pour equal amounts of batter into each prepared pan.
