Ingredients

  • 200 grams of dark chocolate (75% cocoa)
  • 4 large eggs
  • 1/3 cup white sugar
  • 1/2 cup unsalted butter
  • A pinch of salt
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water. Once fully melted, set aside and let it cool down.
  2. Separate the egg yolks from the whites. In a mixing bowl, beat the egg yolks and sugar together until they become creamy.
  3. Fold the cooled chocolate mixture into the egg yolk mix. Stir in the salt and vanilla extract.
  4. In a separate bowl, beat the egg whites until they form stiff peaks. Gradually fold these egg whites into the chocolate mixture, making sure to keep the mixture light and fluffy.
  5. Pour the mixture into a cake pan and refrigerate for at least 2 hours or until it sets.
  6. Remove the cake from the fridge, and it’s ready to serve. It can be garnished with whipped cream or fruit, according to preference.

Note:

Make sure to refrigerate the cake for at least two hours before serving. This will help the mousse set and make it easier to slice. Also, remember to keep the ingredients and the final product away from heat as the cake can melt and lose its delicious shape and texture.
