Coffee Cupcakes Recipe

We’ve got a decadent treat for all coffee aficionados today – Coffee Cupcakes. These cupcakes are infused with the rich, aromatic flavor of coffee, making them the perfect delight not just for dessert but for any time of the day. Let’s dive right in!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup strongly brewed coffee
  • 1/2 cup unsalted butter, melted
  • 2 tsp pure vanilla extract
  • 1/2 cup buttermilk
  • For Frosting: 1 cup unsalted butter, 4 cups powdered sugar, 2 tsp pure vanilla extract, 2 – 3 tbsp strongly brewed coffee.

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a muffin tray with cupcake liners.
  2. In a large bowl, mix the flour, cocoa powder, sugar, baking powder, baking soda and salt.
  3. In another bowl, whisk the eggs, then add the coffee, melted butter and vanilla extract. Mix until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, alternating with the buttermilk, stirring just until combined. Do not over mix.
  5. Fill the cupcake liners 2/3 full with the batter and bake for about 20 – 25 minutes, until a toothpick inserted in the center comes out clean.
  6. While the cupcakes are cooling, prepare the frosting. Whip the butter until it’s creamy, gradually add powdered sugar and continue whipping until it’s light and fluffy. Lastly, add the vanilla extract and coffee. Adjust the amount of coffee depending on how strong you want the coffee flavor to be.
  7. Once your cupcakes have entirely cooled down, frost your cupcakes and enjoy!

These cupcakes will stay fresh for up to 5 days in an airtight container at room temperature. Remember to adjust the strength of your coffee depending on how pronounced you want the coffee flavor. Enjoy!
